Job Description

Kappo Masa is seeking a skilled and detail-oriented Sushi Chef to join our team.

Led by Masa Takayama , Kappo Masa is grounded in precision, discipline, and respect for ingredients. This is a kitchen where consistency and technique matter, and where every dish is expected to meet a high standard.

This role is best suited for a chef who takes pride in their craft and is looking to continue developing in a serious, quality-driven environment.

What You’ll Do

Craft & Execution

  • Prepare sushi and omakase dishes with precision and consistency
  • Execute proper fish breakdown, slicing, and portioning techniques
  • Maintain strict quality standards; proactively flag any issues with product
  • Follow recipes and presentation standards exactly as intended

Kitchen Standards

  • Maintain a clean, organized station aligned with DOH standards
  • Follow FIFO, labeling, and storage protocols
  • Prep and manage your station to support a smooth, controlled service

Team Contribution

  • Work closely with the Chef de Cuisine and leadership team on daily execution
  • Support training and development of junior team members when needed
  • Contribute to a focused, respectful, and professional kitchen environment

Guest Awareness

  • Understand the flow of service and guest expectations
  • Maintain awareness of allergies, dietary needs, and guest requests

What We’re Looking For

  • 3+ years of experience in a high-quality sushi or Japanese kitchen
  • Strong knife skills, including fish butchery and precise slicing
  • Experience with omakase-style service preferred
  • High attention to detail and consistency under pressure
  • Professional, composed, and team-oriented
  • NYC Food Handler’s Certificate (preferred)
  • Strong English communication skills required for service and team coordination
